Crispy Chickpea Burger Recipe

1 can (15 oz) chickpeas, drained and rinsed

•1/2 cup breadcrumbs

•1/4 cup finely chopped red onion

•2 cloves garlic, minced

•1 tbsp tahini

•1 tbsp lemon juice

•1 tsp ground cumin

•1/2 tsp ground coriander

•1/2 tsp smoked paprika

•1/2 tsp salt

•1/4 tsp black pepper

•1 tbsp olive oil

•Whole grain buns

•Toppings: lettuce, tomato slices, cucumber, tzatziki sauce, etc.

Instructions

1. In a food processor, pulse the chickpeas until slightly mashed but still with some texture. Transfer to a large bowl.

2.Add breadcrumbs, red onion, garlic, tahini, lemon juice, cumin, coriander, smoked paprika, salt, and black pepper to the bowl. Mix well. If the mixture is too wet, add more breadcrumbs.

3.Form the mixture into patties. Heat olive oil in a large skillet over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown and crispy.

4.Serve the patties on whole grain buns with your favorite toppings.
