Sweet Potato Burger Recipe
Ingredients
2 large sweet potatoes
•1 can (15 oz) black beans, drained and rinsed
•1 cup cooked quinoa
•1/2 cup breadcrumbs
•1/4 cup finely chopped red onion
•2 cloves garlic, minced
•1 tsp ground cumin
•1/2 tsp smoked paprika
•1/2 tsp salt
•1/4 tsp black pepper
•1 tbsp olive oil
•1 egg (optional for binding)
•Whole grain buns
•Toppings: lettuce, tomato slices, avocado, red onion, etc.
Instructions
1. Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake them for about 45-50 minutes, or until soft. Let them cool, then remove the skins and mash the flesh in a large bowl.
2.In a food processor, pulse the black beans until slightly mashed but still with some texture. Add them to the mashed sweet potatoes.
3.Add cooked quinoa, breadcrumbs, red onion, garlic, cumin, smoked paprika, salt, and black pepper to the bowl. Mix everything well. If the mixture is too wet, add more breadcrumbs. If using, add a beaten egg to help bind the mixture.
4.Form the mixture into patties. Heat olive oil in a large skillet over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown and crispy.
5.Serve the patties on whole grain buns with your favorite toppings.
