Tofu Spinach Curry (Palak Tofu)

- 200g tofu, cubed
- 2 cups spinach, washed and chopped
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt to taste
- 1 tbsp olive oil
Instructions
- Heat oil in a pan, add cumin seeds, and let them splutter.
- Add onions and ginger-garlic paste, sauté until golden.
- Add tomato puree, turmeric, coriander powder, and salt. Cook for 5 minutes.
- Add spinach and cook until it wilts.
- Add tofu and garam masala, cook for another 5 minutes.
- Serve hot with whole wheat chapatis.
