Tofu Spinach Curry (Palak Tofu)

Ingredients

  • 200g tofu, cubed
  • 2 cups spinach, washed and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt to taste
  • 1 tbsp olive oil

Instructions

  1. Heat oil in a pan, add cumin seeds, and let them splutter.
  2. Add onions and ginger-garlic paste, sauté until golden.
  3. Add tomato puree, turmeric, coriander powder, and salt. Cook for 5 minutes.
  4. Add spinach and cook until it wilts.
  5. Add tofu and garam masala, cook for another 5 minutes.
  6. Serve hot with whole wheat chapatis.
